Welcome to our Costa Rica Kitchen as we cook off to see whos signature dish will be put in the Cookbook.
We recently had the pleasure of preparing sweet potato dishes for our Thanksgiving celebration at church. At the end of the meal, votes were cast to determine the best dish. In this article, we will share our experience competing in the cook-off and the techniques we each used to prepare our delicious sweet potato entries.
To begin, we peeled and chopped the sweet potatoes and placed them in an ice water bath to prevent discoloration. Both the pressure cooker and boiling water were used to cook two batches of sweet potatoes. We then baked them with marshmallows and butter in the oven at 370 degrees for about 25-30 minutes, with an additional 5 minutes of broiling. We will also share the feedback and preference of those who tried our sweet potatoes. Nikki used the pressure cooker while Steve used boiling water to cook his dish of sweet potatoes.
Time to Bake
After cooking, we put the sweet potatoes in a pan with marshmallows on top and bake them in the oven at 370 degrees Fahrenheit for about 25-30 minutes. We add a little bit of butter to flavor them up before baking.
Once baked, we serve them at our Thanksgiving dinner. The young people especially loved the marshmallows on top, and we received positive feedback on both the boiled and steamed sweet potatoes. Overall, it took us about 25-30 minutes in the oven, and we had to broil them for an extra 5-10 minutes to get them golden brown.

2 tbsp Butter (mantequilla)
1 Large bags of Marshmallows
1. Peel and cut the camote into 1-1.5 inch pieces. Place the pieces in an ice-water bath to keep them from becoming discolored.2. Fill a couple of big pots with water and bring the water to a boil. Place pieces into the boiling water. Allow to boil for 17 minutes, then strain.Tip: If you cut smaller chunks they will not need to be boiled for as long. You should be able to insert a knife
3. Pre-Heat oven to 370º4Spray pan with nonstick spray. Fill pans evenly with the camote.
5. Cut the butter (mantequilla) into small pieces. Distribute the butter evenly on top of the pieces.Bake
6. Place pans in the oven. Bake @ 370º for 25-35 minutes.7Top with marshmallows (spread evenly). Bake @ 370º for 25-35 min
8. (optional) Broil for 5 minutes.
