Indulge in the natural sweetness of our Vegan Blueberry Banana Oat Pancakes. Made with wholesome oats, ripe bananas, and bursting with blueberries, these pancakes are a healthy, flavorful start to your day. Quick, easy, and utterly delicious!
In a blender, combine the rolled oats, banana, plant-based milk, ground flaxseed (if using), maple syrup, baking powder, vanilla extract, cinnamon, and salt. Blend until smooth.
If using a blender, add the blueberries and pulse a few times to mix them into the batter without completely breaking them down. If mixing by hand, fold the blueberries into the batter after it's blended.
Heat a non-stick pan or griddle over medium heat. Lightly spray with cooking spray or brush with a small amount of oil.
Pour about 1/4 cup of batter for each pancake onto the hot pan. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2 minutes per side
Serve the pancakes hot with additional maple syrup, a sprinkle of fresh blueberries, and a dusting of cinnamon if desired.
