Vegan Blueberry Banana Oat Pancakes: Easy Recipe

 1 cup 1 cup rolled oats
 1 medium ripe banana
 ¾ cup plant-based milk (almond, soy, oat, etc.)
 ½ cup fresh or frozen blueberries
 1 tbsp ground flaxseed (optional, for binding)
 1 tbsp maple syrup, plus more for serving
 1 tsp baking powder
 1 tsp vanilla extract
 ¼ tsp cinnamon
 1 pinch salt

Blend the Oat Mixture:

In a blender, combine the rolled oats, banana, plant-based milk, ground flaxseed (if using), maple syrup, baking powder, vanilla extract, cinnamon, and salt. Blend until smooth.

Add Blueberries:

If using a blender, add the blueberries and pulse a few times to mix them into the batter without completely breaking them down. If mixing by hand, fold the blueberries into the batter after it's blended.

Heat the Pan:

Heat a non-stick pan or griddle over medium heat. Lightly spray with cooking spray or brush with a small amount of oil.

Cook the Pancakes:

Pour about 1/4 cup of batter for each pancake onto the hot pan. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2 minutes per side
